#7. Sweet and Sour Ribena Blackcurrant Glazed Ribs


Serves 2

1 side pork side or back ribs
2 cups Ribena, Concentrated Blackcurrant Nectar
1 Tblsp cumin seeds, toasted
2 Tblsp red wine vinegar
1 small onion, chopped
2 cloves garlic, chopped
2 Tblsp brown sugar
zest and juice of 1 orange

1. Place pork ribs in large pot, cover with water and bring to a boil on the stovetop. Allow to simmer for 40 minutes.

2. Remove from pot and allow to cool. Preheat oven to 350 degrees.

3. Combine Ribena, cumin, vinegar, onion, garlic, sugar, orange zest and juice in a large shallow pan on medium heat and reduce by a third, approx. 20 minutes.

4. Place ribs in pan with sauce and cover with lid or aluminum foil. Bake in oven for one hour. Turn ribs in sauce every 20 minutes. Ribs will be tender and sauce thick and sticky.
