#6. Ribena Blackcurrant & Herb Marinade for BBQ Chicken
Serves 4
4 chicken breasts, skinless
1/2 cup Ribena, Concentrated Blackcurrant Nectar
1/4 cup olive oil
2 cloves garlic, chopped
2 Tblsp zest and juice of a lemon
3 sprigs oregano, chopped (or 1 tsp dried)
3 sprigs thyme, chopped (or 1 tsp dried)
3 sprigs basil, chopped (or 1 tsp dried)
salt and pepper to taste
1. Combine all ingredients a bowl and marinate chicken for 2 hours or overnight in the refrigerator.
2. Preheat Grill. Turn grill to medium heat and place chicken on the grill for 5 minutes a side.
3. Test chicken for doneness and serve.
