#1. Ribena Blackcurrant Salad Dressing


Yield: 3/4 cup

1/2 cup olive oil
2 Tblsp red wine vinegar
3 Tblsp Ribena, Concentrated Blackcurrant Nectar
1 Tblsp Dijon mustard
Juice of 1/2 a Lime
Salt and pepper to taste

1. With a whisk, combine the olive oil, red wine vinegar, Ribena, Dijon mustard and lime juice.

2. Season with salt and pepper to taste.

3. Complimentary with a spinach salad with toasted nuts, goat cheese or feta.
